I would imagine someone has done this before, so rather than stumble through on my own I will lay out my idea and you all can poke holes in it.

Small closet with the following inside:
Fresh Water tank
Pex Hub
tankless water heater
drain for black tank
drain for grey tank
small pvc for running wires to the basement
Solar System - Invertor, batteries, fuse box, etc.

I have a large "garage" area under the bus, so I could put all of that stuff in there, but it would be easier to work on while sitting/standing vs. laying in the storage under the bus. I figure I can make the flooring in the closet easy to remove, in case I needed to get at things. Aside from needing to be careful about mixing water and electricity; what else am I missing?
 
I wouldn't mix the water heater with the solar equipment solely because they are known to leak over time, or even burst due to heating up all the time, and if you had a leak scenario it wouldn't be good. The water heater could be put elsewhere, and lay everything else in the closet.

Small closet with the following inside: - no particular need to put everything in one place. Just make sure they are all accessible (DFR: Design for Repair)
Fresh Water tank-these come in all sizes and shapes. Mine is under the counter and bed.

tankless water heater-put this nearest where the hot water is needed
drain for black tank-this is typically away from everything else, low to the ground, with the hoses stored nearby
drain for grey tank-same
small pvc for running wires to the basement-yes, agreed. I drilled holes through the floor and used PVC fittings with caps (so I could drill the exact diameter for the wire and its grommet)
Solar System - Invertor, batteries, fuse box, etc. - Batteries: secured, close to the inverter, with room for expansion. Consider where shore power will come in to minimize runs, and where the solar panel lines come in to minimize distance to the charge controller and bus bar.

Just some quick thoughts. My bus has these things throughout, not in one place; but yes make them fully accessible and easy to access/swap out, with room for expansion for certain items.
