What should I use for heat?

If you will have at least a 30 amp AC service, perhaps you could go with electric heat. Two or three of these might do the trick:

I use one of these to keep the interior of my RV from freezing in the winter. I just set it to the lowest power setting. An oil filled space heater is probably safer than one with an exposed coil. Price is right, too.
 
It depends. We have pretty good insulation in the walls & ceiling of our BlueBird bus but others here have posted they don't have any insulation or it's not very good. Ours is a thick heavy dense insulation... more like what used to be used on ranges and ovens. I know that we have a cool ceiling in the summer heat. It's so good that we don't plan on adding more insulation to the ceiling (but will add to the walls for thermal break and under the floor as there is none there).
